Fattoush for dinner

It’s time to make a mouth-watering Arabic veggie salad with a sweet pomegranate molasses. This is a low delicious dish that is perfect for a dinner party.

For this you will need:
2 pitta breads
Olive oil
2 tsps sumac
3 chopped baby gems lettuces
A chopped bunch of mint
A small bunch of flat- leaf parsley
2 diced cucumbers
12 cherry tomatoes
2 chopped spring onions
4-5 thinly sliced radishes
1 pomegranate

For the dressing you will need:
72ml pomegranate molasses
50ml cider vinegar
1 tsp dried mint
2 tsps sumac
Juice of a lemon
125ml olive oil
1 mashed garlic clove

Time to get cooking!

Preheat the oven to 200c. Cut the pitta bread into 1-2cm squares and spread these out on a baking tray.

Pour a little oil over them, then sprinkle with sumac and toss so they’re lightly coated. Bake for 15-20 minutes or until crisp and slightly brown. Leave to cool.

Put the lettuce, chopped herb, cucumber, tomatoes and spring onions into a bowl. Scatter the radish slices and pomegranate seeds over the top.

Make the dressing by whisking the ingredients together until smooth. Then add the salt to taste. Make this dressing tarte but play with the flavours to suit your taste.

To serve simply pour about half the dressing on the salad add the pitta croutons and toss together. Serve the remaining dressing in a bowl to accompany the salad.
